NALAN RESTAURANT (INDIAN PURELY VEGETARIAN) EXECUTIVE CHEF * Develop and maintain recipes, portion specifications, and standard preparation procedures for all dishes and ensure th NALAN RESTAURANT (INDIAN PURELY VEGETARIAN) EXECUTIVE CHEF Develop and maintain recipes, portion specifications, and standard preparation procedures for all dishes and ensure that all chefs are following these standards Determine purchasing specifications and budgetary allotments for all menu items Lead and cook by example and provide guidance to your team (Sous Chefs, line cooks) Ensure kitchen operations can run smoothly and efficiently in your absence Make periodic and regular inspections of units to observe quality of food preparation and service, food appearance, cleanliness and sanitation of production and service areas, equipment, and employee appearance Prepare operational reports and analyses setting forth progress, adverse trends and make appropriate recommendations for success Maintain complete knowledge of and compliance with all company policies/service procedures/standards Have a working knowledge of company invoice tracking, labour tracking, schedule preparation, food cost management, labour cost management, inventory control and hiring/counselling/termination policies Manage company franchise kitchen's staff OPERATION MANAGER Oversees in the day-to-day leadership and management of an outlet on all aspects of operations in kitchen and services. Oversees the quality of food and service and be main point of contact for all guest's satisfaction matters. Be responsible for recruiting and training team on-going basis. Be responsible for key financial aspects (Budget vs Actual Sales, Sales Projections & Growth, Inventory management, P & L) and KPI's (guest experience feedback, team member turnover, mystery shop score, team member engagement survey). Proven ability to effectively run both front and back of the house and lead every shift to the Brand standards of quality and service. Proactively taking on additional responsibilities where required. Be an amazing example of service, providing exceptional and professional interactions with guests and staff alike. Ability to promote and drive a culture of the core values and quality & service excellence-cultivates and drives a work atmosphere that is relaxed, welcoming and fun. Provides leadership to our service team, nurturing them to even greater heights of happiness, knowledge, and service. Ensures maximizing profits and minimising costs including efficient scheduling of staff and inventory control, in partnership with the culinary team. Mentors and develops team members to help them reach their full potential. Ability to operate with flexibility and creativity. Ability to achieve goals through others. Provide sufficient trainings Ability to manage and restaurant with a high level of attention to detail and genuine care. Possesses passion for hospitality. Ensures that you have a contagious enthusiasm and infectious energy and ability to influence people in a positive manner. Other duties as assigned. Qualifications (requirements & experience): Minimum 10 years' experience as a Kitchen Chef in a restaurant. Minimum 5 years of experience in managing operations in kitchen and services Sound and proven leadership abilities, resilience, and maturity Strong business sense Be the Brand ambassadors who live & breathe thecompany values and inspire the teams to do the same Able to plan and execute projects and change management Highly skilled at bringing a team together and getting them on board to your way of thinking. Positive work attitude and a high level of energy Concise, and well thought out written and oral communication skills Excellent time management and people skills
