Your day to day

As Junior Sous Chef, you’ll assist the Executive Chef to direct all kitchen activities such as inventory, kitchen staff management and to prepare our delicious food - helping create memorable experiences for guests whenever they dine in our hotel. Your Day to Day

  • Assists in the preparation of departmental budget
  • Assists in monitoring and controlling departmental costs
  • Assist in planning for future staffing needs
  • Assists in recruiting in line with company guidelines
  • Prepares detailed induction program for new staff
  • Assists in maintaining a comprehensive, current and guest focused set of departmental standards and procedures and oversees their implementation
  • Ensures training needs analysis of Kitchen staff is carried out and training programmes are designed and implemented to meet needs
  • Provides input for probation and formal performance appraisal discussions in line with company guidelines
  • Coaches, counsels and disciplines staff, providing constructive feedback to enhance performance
  • Regularly communicates with staff and maintains good relations
  • Assists in developing work efficient rosters in line with local labour codes
  • Develop new dishes and products.
  • Ensure that outstanding culinary technical skills are maintained.
  • Assist with organizing special events and special food promotions. Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets, and current trends and make recommendations for appropriate adjustments to kitchen operations accordingly.
  • Demonstrate Awareness of OH&S policies and procedures and ensure all procedures are conducted safely and within OH&S guidelines and ensure your direct reports do the same
  • Be aware of duty of care and adhere to occupational, health and safety legislation, policies and procedures
  • Be familiar with property safety, first aid and fire and emergency procedures and operate equipment safely and sensibly
  • Initiate action to correct a hazardous situation and notify supervisors of potential dangers
  • Log security incidents and accidents in accordance with hotel requirements

What we need from you

Ideally you have at least 2 years of experience working in the Culinary Operations team and in a supervisory role. You have at least a Diploma qualification and able to lead a team.
