Lanzhou Beef Noodle Chef

The Lanzhou Beef Noodle Chef is responsible for preparing, cooking, and managing the daily production of authentic Lanzhou beef noodles, ensuring the food quality, flavor, and hygiene meet both company and traditional culinary standards.


The chef must master the traditional techniques of hand-pulled noodles, beef broth preparation, beef slicing, seasoning, and presentation.


Key Responsibilities:



Prepare and cook authentic Lanzhou beef noodles, including hand-pulling noodles, boiling, slicing beef, preparing broth, and assembling dishes. Maintain consistency and authenticity of the beef broth, chili oil, and spice blends. Manage ingredient quality, inventory control, and kitchen efficiency. Supervise and train kitchen assistants or junior chefs. Ensure all food safety, hygiene, and cleanliness standards are strictly followed. Work closely with the restaurant manager to improve menu quality and operational efficiency. Adjust recipes and flavors based on customer feedback to maintain a high level of satisfaction.

Job Requirements

Education:


Secondary school or above. Professional culinary certification is an advantage.

Experience:


Minimum

3 years of proven experience

in preparing authentic Lanzhou beef noodles.


Must be familiar with the traditional "five elements" of Lanzhou noodles -- clear soup, tender beef, chewy noodles, red chili oil, and green garnish.

Skills:


Proficient in hand-pulled noodle techniques.


Skilled in soup base preparation and flavor balancing.


Capable of working efficiently in a fast-paced kitchen environment.

Language:


Basic Chinese communication required; English proficiency is an advantage.

Personal Qualities:


Strong sense of responsibility and attention to food quality and hygiene.


Team player with good communication and service attitude.


Willing to learn and adapt to Singapore's food industry standards.

Work Schedule:

6 days per week, shift-based (approx. 44 hours/week)

Contract Duration:

2 years, renewable

Salary:

Based on experience and in line with S Pass requirements
