We are a fast-growing Lanzhou beef noodles restaurant brand in Singapore, dedicated to bringing authentic Northwest Chinese cuisine and modern dining experiences to our customers. We are looking for an experienced

F&B Operations Manager

with extensive management and culinary operations experience to lead our multi-outlet restaurant operations, standardise our product quality, and drive business expansion and local staff training.


The selected candidate will play a critical role in developing operational excellence, quality control systems, and staff capability across the brand. This is a full-time leadership position based in Singapore.


Key Responsibilities



1. Restaurant Operations Management



Oversee the daily operations of multiple outlets, ensuring smooth service, consistent quality, and adherence to company SOPs. Monitor outlet performance (sales, cost, productivity, customer feedback) and implement improvement plans to meet business KPIs. Conduct regular store audits and operational checks to ensure compliance with hygiene, safety, and service standards. Manage manpower planning, rostering, and resource allocation across outlets to ensure optimal efficiency.

2. Standardisation & Product Quality Control



Establish, implement, and continually refine Standard Operating Procedures (SOPs) for kitchen operations, food preparation, and service standards. Work closely with chefs and kitchen teams to maintain the authentic taste and texture of Lanzhou hand-pulled noodles and beef broth, while optimising consistency across outlets. Develop recipe documentation, technical specifications, and standard portion guides to ensure every outlet delivers consistent product quality. Supervise procurement and supplier management for ingredients, ensuring food safety, cost efficiency, and sustainable sourcing.

3. Staff Development & Training



Design and conduct systematic training programmes for both kitchen and service staff, focusing on technical skills, operational discipline, and customer service. Mentor outlet managers, chefs, and front-line employees to improve leadership, performance, and teamwork. Build a structured knowledge-transfer system, ensuring that local staff can progressively assume key operational roles. Introduce staff performance appraisal systems and identify high-potential employees for promotion and succession planning.

4. Business Development & Expansion



Support the company's growth strategy by identifying new outlet opportunities and assisting with site evaluation, layout planning, and store opening preparations. Collaborate with the management team on new business concepts, menu innovations, and promotional activities. Evaluate market trends and consumer feedback to improve menu offerings, service quality, and brand positioning. Participate in budgeting and forecasting exercises, ensuring that business goals align with operational capabilities.

5. Marketing, Customer Experience & Brand Building



Work with marketing teams to plan and execute promotional campaigns, seasonal launches, and customer engagement initiatives. Ensure that the brand's story, cultural values, and authenticity are effectively communicated through service, decor, and menu presentation. Manage customer feedback channels and implement corrective actions to strengthen brand loyalty and repeat patronage.

6. Compliance & Administration



Ensure full compliance with all relevant Singapore food safety and hygiene regulations (SFA, NEA, etc.). Maintain records for audits, licensing, and food traceability. Oversee outlet inventory management, waste control, and cost reporting to improve profit margins. Prepare operational and financial reports for management review.

7. Leadership & Strategic Management



Act as the key bridge between senior management and outlet teams, ensuring strategic goals are clearly translated into operational actions. Lead by example, fostering a positive, service-oriented culture among all team members. Introduce digital and data-driven tools (POS analytics, performance dashboards) to improve decision-making and operational transparency. Plan and manage cross-departmental initiatives such as technology adoption, service innovation, and sustainability practices.

Qualifications & Requirements



Bachelor's degree or equivalent professional qualification (preferably in Food Science, Hospitality Management, Business, or related field). Minimum

15-20 years of experience

in F&B operations, with proven track record in managing multi-outlet restaurants or chain operations. Strong leadership, communication, and organisational skills. Solid understanding of restaurant SOPs, kitchen workflows, supply chain management, and cost control. Experience in

Lanzhou-style noodle cuisine, Chinese culinary culture

, or similar large-scale casual dining operations will be highly valued. Able to train and mentor local staff, design training materials, and conduct hands-on coaching. Strong sense of ownership, adaptability, and passion for developing authentic food brands. Proficiency in

Mandarin

is essential for effective communication with kitchen teams; English proficiency required for documentation and compliance.

Working Hours & Conditions



Full-time, 5.5-day work week (subject to operational schedule). Locations: Singapore (multiple outlets; HQ based at [insert your HQ address]) May require travel between outlets for operational oversight and training.

Salary Range (Indicative):
