Central Kitchen Operations Manager

Job Description

:





Oversee food preparation activities in the central kitchen, including handling of ingredients, operating industrial fryers and vacuum packers, and maintaining cold storage.





Plan production schedules and allocate manpower to meet daily operational needs.





Ensure compliance with food safety standards and hygiene procedures (e.g., HACCP, SFA).





Monitor inventory levels and coordinate procurement of supplies.





Supervise a team of kitchen staff and provide on-the-job training based on established SOPs.





Conduct routine checks on food quality, cleanliness, and equipment maintenance.





Requirements:





Minimum 3 years of experience in food production or central kitchen operations.





Familiarity with HACCP, industrial kitchen workflows, and production scheduling.





Ability to lead a team and communicate clearly in a fast-paced environment.





Able to read and understand operational instructions that may be in English or other relevant languages.





Comfortable working in both warm and cold environments (e.g., near fryers or in cold rooms below 10C).





Shift work, weekends, and public holidays may be required.





Working Hours: 6 days/week, 8.5 hours/day (including breaks). Shift work may apply.
