Organise weekly market list in preparation for food microbiological testing.
Provides support to chefs which include preparing food, testing recipes, plating dishes, cleaning the kitchen, and maintaining supplies.
Assist in the preparation of Mise-en-place.
Assist in cooking prototype patient meal which adhere to cook chill process.
Support lab scale formulation of in-patient meal and maintain any supporting documents.
Conduct food tasting and sensory evaluation.
Refine taste profiles through experimentation and maintain documentation.
Assist, monitor and refine meal rethermalisation process in the regen trolley, maintain record after each trial.
Support collaborative projects between WH and Republic Polytechnic School of Hospitality.
Assist in procurement, receiving and setup of T3 and T4 kitchen equipment in preparation for campus opening.
Assist in pre-ops setup of WH kitchen after early takeover of WH B2 Kitchen.
Perform ad-hoc duties assigned by immediate superior.
Requirements
Possess at least a GCE \'N\' or \'O\' levels, NITEC/Higher NITEC or Diploma in Culinary Skills
At least 5 years of experience in F&B industry
Equipped with Basic Food Hygiene Certificate
Professional and positive attitude towards colleagues and supervisors
Ability to work efficiently and independently
Ability to work in teams
