Responsibilities
Commis, CDP.
Full Time / Part Time available (up to $15/hr).
Drawn to a vibrant, high-energy café environment? Look no further! Experience ideal but not mandatory. Strong culinary interest and willingness to learn is. Full-time & part-time (up to $15/hr) available. 5/ 5.5 day week.
Responsibilities:
- Ensure high standards of food preparation, quality and consistency.
- Maintain a clean and tidy work-station and environment at all times
- Prepare mis-en-place, cut, cook, and arrange food as instructed
- Follow proper Standard Operating Procedures.
If you have no experience, you will be taught:
1. Food Hygiene:
a. How to clean and store food to maximize its shelf life
b. Good working habits that prevent any cross-contamination
c. How to maintain a clean work station
2. Knife Skills:
a. Knowing how to maintain and sharpen a knife
b. How to handle different vegetables, meat and fish
c. Peeling
d. How to be proficient at the different cuts (Slice, Julienne, Dice, Mince, Cube etc)
e. Cutting techniques to maximize shelf life of cut ingredients
3. Pasta:
a. The correct fundamentals and proper way to prepare many classic pasta dishes with authentic recipes
b. How to handle a pasta station, including its Mise-en-place - Garnish, Seasoning, Sauces,
c. How to plate professionally
4. Breakfast / Brunch:
a. How to cook egg different ways: sunny side-up, soft scramble, classic omelette, country omelette, poach
b. How to prepare various brunch dishes
c. How to plate professionally
5. Mains:
a. How to properly cook chicken, steak and fish to the right doneness
b. How to use the Deep Fryer
c. Sides - Roasted Potatoes, Cooked Vegetables, Coleslaw, Fries
d. Sauces - Black Pepper, Bechamel, Bernaise, Hollandaise, Mushroom Red Wine Sauce, Lemon Butter.
