Job Description

The Food and Beverage Service Associate is responsible in delivering personalised and efficient service to Banquet guests during event. The Banquet Service Associate is also responsible in ensuring the set-up is completed accurately according to Banquet Event Order and guides the houseman and outsources casual labour accordingly, ensures that they adhere to hotel Standard Operating Procedures and hotel grooming standards.

Primary Responsibilities

Banquet Service

  • Provides excellent service at all times to all of our Banquet guests based on established hotel standard operating procedures.
  • Is well presented and adheres to hotel grooming standard at all time.
  • Carries out adhoc duties as assigned by the Director of Banquet or Manager on Duty, including but not limited to collects Food and Beverage requisition on daily basis, arranging stocks according to "First in First out" system, sending soiled linen for exchange, sending operational equipment for cleaning or burnishing on weekly basis.
  • Able to read and understand Banquet Event Orders, guides houseman and outsource casual labours and assigns tasks accordingly.
  • Ensures all equipment requisition for event is raised, approved by Manager and submitted to the Stewarding Department 3 days before the actual events.
  • Ensures that the mise en place for every function is at par stock level and sufficient.
  • Has complete knowledge about the operating equipment, set-up tools and storage area.
  • Is familiar with the basic service methods in banqueting including but not limited to Buffet, Coffee Breaks, French, Russian, Outside Catering, Outdoor Venues, etc.
  • Consistently ensures that the room set up is accurate, timely and set according to Banquet Event Order or as instructed by the Managers/Supervisors.
  • Consistently ensures all cutleries, flatware and glassware is polished, wiped and spotless.
  • Ensures chairs covers and banquettes clean and free of wrinkles or thread.
  • Up keeps and clears tables between services in a timely manner without interrupting the Banquet guest dining experience include but not limited to Coffee Breaks, Western Set Menus, Buffet, Chinese Courses and etc.
  • Coordinates with Manager on Duty the timing to pick up the food at the food pass area in a timely and efficient manner.
  • Relays any guest complaints to the manager on duty immediately.
  • Consistently follows through the Banquet opening, closing and side duties checklists.
  • Consistently ensures back of the house is clean and tidy at all times.
  • Ensure all rented equipment is checked before signing off from organiser or 3rd party vendor.
  • Handles all equipment and tools with care during set up and events.
  • Ensures rented equipment is checked before returning to organiser or 3rd party vendor.
  • Conducts routine inventory and care for banquet supplies such as linens, chinaware, glassware, flatware and decorations and upkeep the furniture and equipment storage as per hotel standards.
  • Ensures cleanliness, work safety and efficiency of work in pantry, storerooms and service preparation areas.
  • Carries out any other reasonable duties and responsibilities as assigned.

Learning and Development
  • Participates in training activities to improve knowledge & skills.
  • Attends daily briefing and monthly meeting conducted by the Director of Banquet.
Candidate Profile

Knowledge and Experience
  • Certificate or diploma in hospitality or related field or minimum of 6-12 months hands on experience in food service position, similar operations style.
  • Prior work experience in Banquet or large-scale restaurant operation preferred.
  • Food and /or beverage knowledge (personal interest/ professional).
