Job Description

The Raffles Beverage Ambassador - Food and Beverage Service Executive supervises team members by proactive, interactive and reactive leadership, allowing each member of the team to feel confident and to completely satisfy our guests during their dining experience. He/she assists the management in supervising the overall operation and service standards of the restaurant to meet and exceed guest’s dining experience expectations as well as to contribute to the achieving the set financial and other targets of the four outlets; Long Bar, Raffles Courtyard, Writers Bar and Pool Bar. Primary Responsibilities Oversees Daily Operations and Achieving Targets

• Oversees the set-up and operation of a station/section in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Supervises and participates in running of an efficient and profitable operation in the assigned areas in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Liaises with outlet manager and head bartender to actively encourage a professional and dedicated team in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Provides services for guest such as order taking and promoting the restaurant food and beverage offerings for Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Has extensive knowledge of the hotel’s food & beverage menus in order to provide knowledgeable service our product, including liquors and cocktails, upselling products whenever possible and adequate in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Offers beverage menu options, advice and takes orders for Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Remembers guest’s preferences in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar and guest’s names to extend adequate personalised service.
• Takes guest’s Food & Beverage orders timely, professionally, accurately and assures correct input in Point of Sales system including seat cover position or any allergens.
• Double checks order list before "sending" ticket to the kitchen in a timely manner.
• Anticipates guest needs, as to where guests will never have to ask for anything or follow up.
• Verifies guest satisfaction with each table as whenever adequate based on guests and sequence of service in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Arranges all tables following established standards for Long Bar/Raffles Courtyard/Writers Bar/Pool Bar in a timely manner.
• Arranges and maintains all assigned side stations and continually stocks each station before and after every shift in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar in order to always be adequately stocked.
• Manage the entire service operation of Long Bar/Raffles Courtyard/Writers Bar/Pool Bar for one shift.
• Makes sure that all product served are accounted for on the final bill before presenting it for Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Picks up check before guest leaves and wishes each and every guest a warm farewell while thanking them for their visit.
• At the end of the shift, delivers all checks and reports to the appropriate place according to established standards for Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Follows through opening and closing duties for for Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.

• Actively engages in upselling for Long Bar/Raffles Courtyard/Writers Bar/Pool Bar and adds value.
• Ensures efficiency of work in dish wash, pantry, and service preparations in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Ensures cleanliness and work safety in food preparation and service areas in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.

Bar Operations and Service

• Supports Head bartender in providing world-class hospitality and drinks making in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Ensures operating par stock for OS&E and beverage in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Delivers quality and consistency of all drinks served in accordance with the bar recipes in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar by Raffles Hotel Singapore.
• Ensures maintenance equipment check list to be conducted on weekly basis with Engineering and Housekeeping team in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Ensures Long Bar/Raffles Courtyard/Writers Bar/Pool Bar and related areas and outlets’ hygiene are kept to Raffles Hotel Singapore and HACCP standards.
• Ensures cleanliness and appearance of Long Bar/Raffles Courtyard/Writers Bar/Pool Bar and related areas at all times and takes immediate action if needed or required.
• Attends all Raffles Hotel Singapore or Food & Beverage training platform for all colleagues.
• Familiarises self with the company’s applicable processes, software and technologies (e.g. Micros, Material Control, etc.).

Provides a Leading and Consistent Guest Experience

• Promotes sales in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar through direct guests’ contact.
• Constantly obtains guest feedback during operation in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar ensuring guest satisfaction.
• Handles minor complaints and reports to the managers in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar for proper follow up.
• Builds strong relationships with local guests and builds loyal following as foundation for a successful operation in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Maintains levels of confidentiality and discretion of the guest, colleagues, operator at all times.

Management and Leadership of Outlets

• Acts as a mentor and role model for the Raffles Beverage Ambassador - Food & Beverage Associates in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar
• Proactive, innovative with in depth Food & Beverage and market knowledge.
• Observes colleague’s individual performances, grooming, and punctuality and communicates with the managers in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar accordingly.
• Provides a high level of Safety and Security for guests and colleagues when working in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Checks daily opening and closing duties for Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.

Training, Learning and Development of the Team

• Conducts regular on the job trainings for colleagues to develop their skills and knowledge in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.
• Records and submits monthly On-the-Job Training hours in Long Bar/Raffles Courtyard/Writers Bar/Pool Bar to Food & Beverage Office before the 15th of each month.
• Guides the departmental orientation for new hires for Long Bar/Raffles Courtyard/Writers Bar/Pool Bar.

Candidate Profile Knowledge and Experience

• Certificate or diploma in hospitality or related field.
• Minimum 2 years’ experience in an international class restaurant.
• At least 1 year relevant experience in a similar capacity an advantage.
• Additional improvement programs in Food & Beverage an advantage.
• Working knowledge of Microsoft Office.
