We are looking for a Research & Development Chef who is passionate about pushing the boundaries of flavor and turning innovative ideas into unique yet authentic craveable food for our community. Menu & Product Development:
Lead the ideation, conceptualization, development, and refinement of new food products, recipes, and menu items for R&D initiatives, ensuring scalability and cost-effectiveness within established timelines
Collect feedback from the team members on trial products before launching
Create special items for seasonal/limited-time menu
Recipes & SOPs Optimization:
Research & conduct Sensory Evaluation to enhance recipe formulations and SOPs
Maintain our Food Cost table and continually reduce cost
This involves careful observation and experimentation with different ingredients, techniques, and recording precise measurements for nutrition tracking, flavor profiles, food presentation, and right temperature adjustments
Quality Audit & Assurance:
Regularly inspect the quality of ingredients and techniques to troubleshoot promptly, ensuring consistency in product result and portion control across all outlets
Regularly conduct checks on outlet SOPs
Training Support:
Deliver training to the managers on the update changes/ new developments with specific SOPs
On ground to train and setup during new store opening
Guide new staff for proper storage and handling of food related items
Trend Analysis:
Stay up to date with F&B trends and consumer demands/preferences
Closely collaborate with marketing and operation teams for new solutions
Hygiene & Safety Compliance:
Maintain high standards of food safety, hygiene, and kitchen operations in compliance with legal and regulatory guidelines
Qualification Requirements
Prior proven experience of minimum 3 to 5 years as a sous chef
Culinary degree or relevant certification
Strong knowledge of culinary techniques, ingredient functionality, sensory analysis, kitchen equipment and food safety regulations
Proficiency in inventory management and cost control
Exceptional creativity and a knack for innovative problem-solving
Excellent communication, organizational, and management skills
Strong attention to detail and commitment to quality outcomes
Energetic with the ability to thrive in a fast-paced environment
Long-term commitment and able to handle private & confidential information
Work Location
440 Geylang Rd, Fellascube, Singapore 389400 (Primarily, requires to travel everywhere in sg)
Work Duration
10-hour shifts including 30-minute break, and 5-day work week (weekends required during store opening and audit period)
Remuneration
Salary Range: S$3500-4500 (Depending on experience)
