He must effectively lead a team, control food cost, labour cost, other controllables, maintenance and energy costs throughout the kitchen. The service of high quality food and achievement of budgeted or higher profits are a top priority, accident prevention and energy conservation are considered top priorities and cannot be over emphasised. JOB DUTIES AND RESPONSIBILITIES Assist Executive Chef and Executive Sous Chef in assigning, co-ordinating, and supervising all phases of food production. This includes prep kitchen, banquets, service kitchen, salad and cold prep in general, store room. Maintains food quality and service in accordance with standardised company recipes and procedures throughout all food producing areas. Checks daily use records, production charts and breading charts against house counts and expected business. Adjusts estimating to the daily flow of business if necessary eliminating over production and waste. Has to expedite during high peak service in his respective shift to control service flow. Maintains and supervises good housekeeping practices in all food producing areas, strictly enforcing 'Clean As You Go' policy, also throughout all walk-in, freezers and reach-ins. Checks out all work station at beginning and end of the shift. Insures adequate set-up for breakfast, lunch and dinner business. Constantly spot checks food and service during all meal periods to insure foods meet our portion control and quality standards. During meal periods, frequently visits all dining rooms and checks with customers to make sure that their meal and quality of food has been satisfactory. If customer complaints are encountered, situation is to be corrected immediately. Aids in cross-training and development of all food production employees with help of area supervisor. Writes recipe cards and prepares dishes for photographing and keep file. Help the Restaurant Manager in training classes. Check daily mis-en-place, preparation, cooking and presentation of all food items. Assists the Executive Chef in planning menu for daily specials and food promotions. Attends all scheduled meetings throughout food purchasing areas and comes up help of area supervisors. Schedules and conducts regular monthly employee meetings with all kitchen employees. Prior to this, will solicit area managers and lead hourly employees for topics to establish an agenda. Helps develop lead employees to assume more responsibility and in conjunction with this assists in cross-training all employees throughout food area and helps develop back in personnel. Actively seeks to develop a back-up person for his own position. Assist Executive Chef and Executive Sous Chef/ Chinese Chef in maintaining budgeted food labour cost in order to produce desired profits throughout food producing areas. Assists Executive Chef in rating, hiring, terminating, training of all personnel whenever necessary. In order to avoid personnel problems, will make extra effort to listen to all employee complaints and immediately communicate to Executive Sous Chef or Executive Chef in order to avoid employees turnover and keep morale at highest level possible. Assist all area managers to extend daily time cards in food producing for payroll and wage progress report. Assist all managers in rating all hourly personnel fairly, on time and within Marriot policy. The ratings will be conducted on individual basis and in a private location. Will make an extra effort to familiarise himself/herself with all Marriott polices and procedures as soon as possible in order to be able to apply them on a day to day basis. All material pertaining to this will be available in folders such as F&B Manuals, Purchasing Manual, Personnel Manual, Executive and General Manual, and Kitchen Manual Procedure Book and Recipe File. Must be aware of the unique position that we are in on this particular property and that this poses a great challenge upon this position in view of food quality. Must achieve continuous guest satisfaction, keeping in mind the number of restaurants, variety of food served, recreational facilities, banquet facilities. Make sure that all employees throughout entire food production area have proper tools in order sharpened and clean on all stations available. This must include clean utensils, pots, pans and sheet pans. Makes sure that all utensils such as knives, ladles, spoons, cutting boards, are rinsed daily in iodine water. This should be worked out in conjunction with Chief Steward, it will retard any kind of bacteria growth and transmission. Must properly supervise handling of all other controllable and equipment, like knives, spoons, ladles, and all small kitchen utensils. Make sure that budget for all controllable will be maintained. See to it that the kitchen is always in safe condition to prevent unnecessary accidents. Any other duties as may be assigned from time to time.
