Job Description

We are looking for a full-time Head Sommelier for a japanese omakase restaurant located in Orchard.6 Days work week Roles and responsibilites includes: Search, select and buy wines from around the world, in conjunction with the Cellar and Stores Manager and Purchasing Ensure that all wines are stored, presented and served to the required standards Assist the Director in creating, maintaining and developing all wine stocks, wine sales and wine lists. Regularly review the wine list in line with the current trends and ensure that the wine list appeals to a diverse customer base Support all Managers in the sales of wines and to advise them on the best wines appropriate for the guest Ensure that the wine service provided to clients is at the highest standards Actively participate in the generation of ideas to impact positively on wine sales revenue and to assist in the implementation of these ideas Ensure that the beverage cost and contribution margins for wine meets the hotel target Select wines for all wine lists and organise wine tasting Compose all wine lists to achieve maximum guest satisfaction, profit, prestige and trade recognition Be available at service times to support the team and provide a five star service Advise guest on wine selection in articulate, affable and friendly manner displaying professional salesmanship Have a comprehensive knowledge of all International wines, their characters and vintage merits with a detailed knowledge of the characteristics of all wines on the wine list. Have a comprehensive knowledge of after dinner drinks, i.e. Ports, Cognac, Armagnac's, Liqueurs, etc. Be fully aware of the operation of the Infogenesis Point of Sale system and ensure that when operating the system utmost accuracy while inputting is maintained Create a wine experience by advising guests on wine and after dinner drinks choices while serving them with accuracy and flair Responsible for assisting and ensuring that the beverage sales forecasted for the restaurant are metSkills and Qualifications required: Minimum Bachelor's degree in Hotel Management Worked in a Michelin starred restaurant and/or five star hotel Exceptional knowledge of wines and spirits Strong knowledge of classical and modern cuisine and wine pairing
