Summary:
As the Sous Chef at Oak & Ember, you will be the second-in-command in our kitchen, playing a crucial role in overseeing the preparation, cooking, and presentation of our smoked meat dishes. You will work closely with the Head Chef to manage the kitchen team, ensure operational efficiency, and uphold our high standards of quality and consistency. Key Responsibilities:
Culinary Leadership
Assist the Head Chef in planning and directing food preparation and culinary activities
Take charge of the kitchen in the absence of the Head Chef
Assist in creating staff schedules, delegating tasks and managing kitchen staff during shifts
Supervise and support the kitchen brigade, providing guidance and training to junior chefs
Menu Development
Assist with cooking and assembling dishes, ensuring timely and quality presentation
Collaborate with the Head Chef in developing and refining menu items
Experiment with smoking techniques, flavours and cooking methods for recipe refinement
Assist in designing menus for special events, private parties and catering orders
Operational Management
Oversee the day-to-day operations of the kitchen
Ensure all food leaving the kitchen is of the highest quality, maintaining consistency in taste,
texture and presentation
Monitor and control food costs, portion sizes, and waste to maximize efficiency and profit
Ensure cleanliness in all areas of the kitchen, including equipment and work surfaces
Team Support
Work collaboratively with the kitchen team to ensure smooth and efficient service
Communicate effectively with senior chefs and follow their guidance
Assist with any other tasks as needed to support the kitchen operations
Job Requirements:
Proven experience as a Sous Chef within a high-volume kitchen
Strong knowledge of cooking techniques
Leadership and people management skills, with experience in supervising and training staff
Excellent organizational skills with ability to manage tasks in fast-paced environment
Passion for delivering high-quality food and fostering positive kitchen environment
