Leading the planning, creation, and experimentation of new menu items and worked closely with the team to design an effective, high-quality menu at a fair price for both a fine dining setting as well as a bar food setting.
Conduct training on the new menu/recipe for all kitchen staff and monitor execution by the teams across the group\xe2\x80\x99s restaurants on an ongoing basis.
Make recommendations, coordinate all purchases for Japan-related ingredients and sake, and establish their potential viability as a product to be sold within Iki Concepts\xe2\x80\x99 premises. This includes coordinating with Japan-based suppliers in Japanese.
Maintain systems that will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well as foster an awareness of the importance of food preparation and quality.
Responsible for achieving sales and profitability targets with the team.
Responsible for the costing and updating of all costing sheets for food.
Work with the marketing and service team on marketing initiatives and events from the planning to execution phases.
Ensure a clean, neat, tidy, and odor-free environment prior to guest arrival daily and that space always adheres to all food safety and health regulations.
To ensure all equipment is kept in perfect working condition and to report any deficiencies
Implement kitchen standard operations procedures
Requirements:
Over 3 to 5 years of relevant experience in the Japanese fine-dining restaurant
Creating sushi menus and preparing different types of sushi
Ability to take full responsibility for food menu development
Excellent knowledge of Japanese cuisines, their preparation, and service.
Aware of the latest culinary concepts in a broad range of cuisines.
Excellent communication and leadership skills.
Well-groomed, professional appearance, and excellent personal hygiene.
Working days: 5.5 days per week
Off-days: Every Sunday full day off and Monday is a half day off. Except for 3rdweek Sunday and the following Monday (swap off days)
Location: Orchard Road (Near Orchard station), Forum the Shopping Mall
Salary Package: Up to $4,500 (commensurate based on experience)
