Overall Job Role:

As Executive Chef of Sentosa Golf Club, you will be exposed to private dining opportunities in both small and large groups where you will be encouraged to delight dignitaries of all levels, local and foreign, including the who\'s who of Singapore with culinary specialities, this is the perfect platform to show off your creative talents.

Additionally, you will be exposed to large banquet functions related to corporate golf events, company D&D and corporate gatherings. The Club holds multiple International Golf events a year. Some are very high profile and televised worldwide, showcasing the Club and the world\'s best golfers. Some are smaller events with more local participation but being flexible to meet the organiser\'s needs and the participants are critical.

The Club also offers food and beverage daily on the Terrace, serving breakfast, Lunch, dinner and light snacks and similar in the Members Bar we now refer to as Roots.

As an Executive Chef, you will be called at times to provide overall management operations to ensure the Clubs\' reputation and safety standards are upheld within the Club\'s area and the external parties. It is imperative as Executive Chef, you are to work closely with the key executive team at the Club that run the other operations such as the Golfing, Banqueting, Food Beverage Operations, House Keeping, Agronomy, Marketing, Sales and more to support and help balance the leadership roles and responsibilities of the key Head of Department (HOD) obligations to maintain a healthy productive workplace for all.

The Executive Chef at the Club is also called on to work with our corporate ownership Sentosa Development Corporation to advise them on projects or produce culinary offerings from time to time for their key meetings or dinners. The Executive Chef must help guide, train and build on the reputation of the Club and uphold its standards at all times.

There are two other outsource operations working in the Club, Sushi Kondo, which caters to Japanese cuisine and Pan America, which has a selective menu that caters to Lunch and late-night options.

Duties & Responsibilities

  • Manage day-to-day kitchen activities, plan and assign work within Western section and assists the Executive Chef in achieving maximum productivity
  • Control and ensure that expenses, purchases, and requisitions are within budget limits
  • Ensuring that all food items are prepared in accordance to the recipe cards, maintaining portion control and minimizing wastage.
  • Ensuring that food stock levels within food preparation areas are of sufficient quantity and quality (adhering to club\xe2\x80\x99s storage and rotation policy) in relevance to the club\xe2\x80\x99s occupancy and function forecast.
  • Ensuring proper handling and storage of all food items in accordance with Club\xe2\x80\x99s standards and sanitation / health regulations
  • Maintains consistency of first-class food quality in all areas of the food productions.
  • The implementation, physical organization and preparation of new items and menus.
  • Ensuring that all relevant banquet set-ups are prepared ahead of guest\xe2\x80\x99s arrival and in adherence with club standards
  • Manage weekly work schedules and annual leave plan
  • Monitors and led the preparation of staff meals for employees
  • Lead, guide, train and motivate the culinary team.
  • Supervision of all stewards and their activities within the food preparation areas.
  • Review existing work processes and procedures, propose to management and plan continuous improvement activities within the team
  • Assist to monitor team\'s compliance with the organisation\'s Workplace Safety and Health (WSH) policies and procedures, food waste management & hygiene standards

Job Requirements
  • Diploma/Specialist certificate in culinary arts.
  • At least 3-5 years of relevant experience in a similar capacity
  • Strong leadership qualities to lead and motivate a team
  • Possess creativity and passion to keep up to date with the latest culinary trends
  • A hands-on person, able to multitask and have and have good time management skills
  • Possess valid Food & Hygiene Certification
  • Possess the ability to work and interact with people across all demographics and culture.
  • Highly motivated with a strong driver attitude
