Reporting to:Hotel ManagerDuties and Responsibilities:
Achieves targeted daily, weekly and monthly revenue.
Plans the menu beforehand according to the events scheduled / reservations.
Maximizes food and beverage sales by identifying and targeting sales opportunities through marketing including promotions and special events and by training staff on "up-selling."
Controls costs of all food and beverage outlets by assisting management, as requested, in purchasing, maintaining effective profit and loss controls.
Ratio of manpower versus expected cover is balanced.
Manages function rooms, restaurants and bar to ensure proper preparation, including set-up of tables, chairs, linens, table settings, glassware, etc.
Communicates with service, kitchen staff and other departments regarding reservations, special requests and / or special events.
Provides training, mentoring and coaching to staff where required.
Adheres to all safety, sanitation, food preparation and food storage. Reports and takes action on all hazards.
Reports immediately any issues and identify solutions to issues / matters.
Ensures restaurant is secure upon departure and that all lights, equipment, doors, etc. are turned off or locked.
Ensures adherence to policies and procedures and the practical application of these.
Maintains consistency of service standards and flow of operations.
Provides an accurate report on daily sales and trends.
Has complete documentation on all activities, endorsements and reports.
Has accurate inventory of supplies, equipment and other assets.
Records and reports all breakages and losses immediately.
Addresses in a professional, timely manner all guest queries or complaints.
Implements service improvement ideas and develops new concepts to ensure customer satisfaction and repeat business.
Monitors and records the maintenance of department equipment.
Qualification / Competency Requirement:
Previous Food and Beverage managerial experience
