About TUMCREATE TUMCREATE is a multidisciplinary research platform of the Technical University Munich (TUM) at the Singapore Campus for Research Excellence and Technological Enterprise (CREATE). We are joining forces with universities, public agencies, and industry for the advancement of future technologies.

Our large-scale Food Science ‘Proteins4Singapore’ program is funded by Singapore’s National Research Foundation (NRF). The Technical University Munich (TUM) and Nanyang Technological University (NTU) join forces with the Singapore Institute of Technology (SIT) and A*STAR’s Singapore Institute of Food and Biotechnology Innovation (SIFBI) to research plant-based proteins.

Key Job Purpose for Position You will be working in the team of Proteins4Singapore, a comprehensive research programme with renowned scientists of plant and food technology, food chemistry, and business sustainability. Interdisciplinary teams will generate state-of-the-art methods and techniques to ensure a sustainable protein supply in highly urbanized environments.

This subproject is dealing with the characterization and analysis of proteins from microalgae and soy biomass, and the enzymatic processing to produce purified protein fractions. With these fractions, we will generate flavour compounds and techno-functional protein and peptide products.

Key Responsibilities

  • Identification of key flavor compounds in native and processed algae and plant matrices
  • Characterization of flavor-matrix interactions, bindings and release
  • Physical-chemical characterization of selected tastants and odorants
  • Support of lab management in close coordination with team leaders
  • Development and supervision of a human sensory panel (panel training, experiments, data evaluations)
  • Scientific communication with various stakeholders (program partners, scientific community)

Competencies and Qualifications Requirements
  • Expertise in instrumental analysis and structure identification of small molecules (MS and NMR)
  • Using the Sensomics approach
  • Unified flavor quantitations
  • Experience in human sensory testing and panel development
  • Good team player, able to work with deadlines and dynamic requirements.
  • Self-motivated and quick learner who is passionate about latest trends and technologies.
  • Positive attitude and desire to work in fast-paced environment.

  • Expertise in chromatographical isolation, mass spectrometry techniques and data analysis
  • Experience in methods of physico-chemical structure characterization (HR-MS, NMR, etc.)
  • Experience in data analysis, visualization and presentation of complex experimental designs

Job Requirements
  • Master’s degree in Food Chemistry, Food Technology and related fields.
  • 3+ years of working experience on the indicated research fields and scientific project management.
  • Strong skills in English speaking and writing, problem-solving and communication.
