The Granary Bakehouse is looking for a dedicated and experienced
Head Baker
to lead our passionate team in crafting beautiful breads and viennoiseries for our bakery cafes and wholesale partners. From sourdough loaves to croissants and cruffins, our central bakery at Mandai is where tradition meets innovation.
The Head Baker will oversee daily production, uphold quality standards, and inspire the team to pursue baking excellence.
Duties & Responsibilities
Lead and supervise the bakery team to ensure smooth daily operations
Maintain high standards in the production of sourdough breads, tin breads, croissants, cruffins, and other baked goods
Oversee mixing, shaping, baking, and lamination processes
Guide the production of preferments, curds, and roux with precision
Ensure proper packing, preparation, and presentation of finished products
Uphold cleanliness and hygiene standards across the bakery and equipment
Troubleshoot production challenges and implement process improvements
Collaborate with cafe and wholesale teams to align output with demand
Mentor junior bakers and foster a culture of learning and teamwork
Requirements
Proven experience in artisan bread and viennoiserie production, ideally in a leadership role
Deep passion for baking and a commitment to craftsmanship
Strong leadership and interpersonal skills to build a positive team culture
Excellent attention to detail and problem-solving abilities
Humble, hardworking, and motivated to delight customers through quality products
Ability to manage production timelines and adapt to operational needs
