DUTIES AND RESPONSIBILITIES:
  • Evaluate operations and procedures and suggest improvements to the Western Restaurant and Bar Manager.
  • Assign responsibilities to subordinates and check on their turnout.
  • Manage and assist subordinates during busy periods in service.
  • Demonstrate thorough knowledge on products, menus, beverages and equipment.
  • Liaise with Kitchen and Bar on daily operations.
  • Check on all the daily reports.
  • Attend all F&B meetings and daily Hotel operations meeting when require.
  • Conduct F&B briefings to staff.
  • Demonstrate understanding of and adherence to the Hotel\xe2\x80\x99s regulations outlined in the employee\xe2\x80\x99s handbook.
  • Anticipate the volume of business, taking into consideration the occupancy of the Hotel, the holidays, the weather, the activities in the Hotel, and the community in general.
  • Prepare and submit the weekly roster of the week.
  • Forecasting on weekly casual labour roster when require.
  • Monitor the quality and quantity of all food and beverage items served.
  • Co-ordinate with the respective department heads on any activities which overlaps with or concerns their departments
  • Check all employees regularly for cleanliness, appearance, and ensure they take pride in their uniform.
  • Enforce courtesy and efficiency.
  • Conduct daily checks and work with the Head Chef to ensure that the food or display of F&B items is done attractively. eg: Coffee Break etc.
  • Be foremost driven in theme coffee breaks and cocktails in terms of ideas and competition in market
  • Ensure that all employees in direct contact with guests have good product knowledge.
  • Demonstrate complete knowledge of local liquor and food service laws.
  • Regularly inspect equipment and ensure that they are well-maintained and in good working order.
  • Analyze monthly P&L statements to ascertain that all costs are in line.
  • Keep the Western Restaurant & Bar Manager informed on all items of interest.
  • Conduct performance evaluation.
  • Maintain good communication with all other Hotel departments.
  • Create a sound and strong working relationship with all staff and help them to develop to their maximum potential.
  • Enquire guests\xe2\x80\x99 satisfaction and handle guests\xe2\x80\x99 complaints to establish good guest relations.
  • Ensure that all newly hired employees are properly screened and that they receive the Hotel\xe2\x80\x99s orientation program, are instructed in all F&B service procedures, and are informed of the rules and regulations.
  • Co-ordinate all training programs for the staff and identify all training needs.
Requirements
  • Minimum Secondary Education.
  • Good communication and interpersonal skills
  • Teamwork spirit display to ensure service standards are met.
  • Good Service Orientation
  • Attentive and meticulous
  • Able to work under pressure to serve customers quickly and efficiently.
  • Capable of working well with kitchen staff and ensure customer\xe2\x80\x99s requests are met.
  • Ability to perform duties including weekends, and public holidays
