Replacement Cook (Chinese Restaurant)
Under the guidance and supervision of the Chinese Chef, within limits of established policies, procedures and food recipes, to oversee and directs all aspects of this section.
Task/Responsibilities
- Replaces the cutter, wok, steamer, announcer, helper, BBQ chef & dim sum cook when they are on off day, annual leave or public holidays
- Assist within Culinary division during crunch situations
- Cleanliness of kitchen work area, hygiene and grooming of staff
- Follow-up and inspection of daily functions happening in the hotel
- Maintain professional records and ensures standards are maintain and adhered
- Evaluates staff performance
- Controls wastages within the Chinese culinary area
- Production, preparation and presentation of all food items
- Ensure superior quality of food produces
- Executes inspections of kitchen area and food preparation areas
- Establishes and maintain effective employee relation in his section
- Is involved in creative sessions
- Ensures discipline and sets examples
- Maintains interdepartmental working relationships
