Operational Duties Manage and oversee the entire kitchen operation, ensuring correct procedures are adhered to in day -to-day food preparation Devise new menus and food concepts including settling the standards for recipes, portion control and costing. To maintain a high standard of service at all times. To ensure all products used are of high standard. To produce all dishes to a high standard upon presentation of the recipe. To ensure all areas are clean and tidy after service. To ensure all dishes are served at the correct portion size, quality and temperature. Jointly responsible for preparing kitchen cleaning rotas, supervising cleaning schedules and signing off on a weekly basis. To ensure when ordering on behalf of the Company, the most competitive price is obtained. To work at other establishments of the Group as required. To control production to eliminate or minimise wastages. To allocate work to junior kitchen staffs. To clean working areas as needed and necessary. To give an assistance to Chefs in charge. To be fully aware of, and able to carry out the full duties of a Sous Chef. Training Collaborate with management to develop and carryout ideas and procedures to continuously improve department performance. Work with management to ensure that newly hired fellow staffs receive orientation training.
