Job Overview The Sous Chef is a highly skilled professional cook who oversees the BOH operations of our dining cafe. He will work closely with the Head Chef and is responsible for the food that comes out of a kitchen, from conception to execution. He will step in to command in the absence of the Head Chef. He is creative and is willing to experiment with new and seasonal menu options. He is an ambitious, passionate and driven individual and will lead a team to ensure that our food maintains the highest quality. He has good communication skills and has in-depth knowledge of cooking methods, ingredients, equipment and processes.

Responsibilities :
Manage all activities in the kitchen, including menu, food preparation and production, and management and training of kitchen staff
Ensure efficient, cost-effective operation and profitability of food production
Supervise and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order
Ensure that food products, presentation, and plating are of the highest quality, and are prepared to serve in a timely manner
Assure adherence to all standards of food quality, preparation, recipes, and presentation in conjunction with the specifications
Monitor holding and storage operations, stocking and food rotation, and guarantee food service sanitation standards are met
Assure that the kitchen team is trained in best cleanliness and sanitation practices
Requirements :
Minimum 2-3 years working experience in a similar environment ( western setting ) and experience in a culinary leadership role is preferred
Ability to work in a very fast-paced environment
Conversant in both English and Mandarin
Ability to communicate clearly with managers, BOH and FOH employees as well as guests ( when necessary )
Must possess the Food Safety & Hygiene Certification
Ability to bend, stand, and stoop for long periods of time, and working long hours in hot conditions
Able to work 6 days per week
Must have experience in calculating figures and amounts to perform budgeting functions to meet the business needs
