Job Description


KEY OBJECTIVES & DELIVERABLES

  • Is aware of daily and weekly specials in the restaurant - checks pricing
  • Is aware of the availability of products
  • Monitors food and beverage cost results and discusses with Chef
  • Gets to know and personally deals with regular guests
  • Personally monitors all guest complaints
  • Ensures a positive ambience
  • Ensures guest satisfaction
  • Ensures that all subordinates in allocated areas receive the necessary training for job
competence
  • Checks duty rosters in allocated areas, ensure coverage and monitors timekeeping and
absenteeism
  • Monitors the personal appearance and hygiene standards of all service staff
  • Holds daily meeting with Food & Beverage team
  • Regularly checks all areas for maintenance requirements and follow up
  • Keeps a close eye on cashiering – correct billing etc
  • Ensures tightest control over Food & Beverage security
  • To keep expenditures to a minimum
  • Maintain strict security standards to avoid damage or theft
  • Monitor staff turnover and keeps up high level of staff morale
  • Monitor standards of hygiene and cleanliness in all areas including back of house areas
  • Devise and implement a regular training program with 1 training per week in high season
and 2 trainings per work in low season
  • Implement and control the weekly General Cleaning in FOH
  • Ensure the look and readiness of all public areas of the outlet at all times
  • Making daily report of operations
  • To maintain the manning guide as per budget
  • Control Staff’s PH/AL
  • Control Front area/Valet area when applicable
