Check and ensure all goods entering the hotel are in good condition and correct quantity.
Match invoices against market list and purchase order.
Update all issuing transactions into the system via transfer voucher for food, beverage, tobacco and operating equipment and item journal for general supplies and stationery.
Responsible for replenishment of items when stocks run low.
Ensure that all goods are unpacked and neatly arranged on the shelves according to category.
Responsible for the maintenance and upkeep of the storerooms.
Assist the Cost Controller on month-end food inventory for All-Day-Dining and Staff Cafeteria.
Conduct monthly inventory on all food stocks i.e. provision, fruit, vegetable and dairy store.
Assist the Cost Controller in performing annual store inventory for chinaware, glassware, silverware, stainless steel ware, general supplies and stationery.
Monitor expiry dates of stocks and ensure that all goods are used prior to their expiry dates.
Ensure that all goods without expiry date are strictly issued on a First-In First-Out basis.
Ensure full compliance with the Food Safety Guidelines:
Goods in Controls (Procedure for Receiving Food Goods)
Temperature Controls Procedures
Demonstrate a rejection system
Procedure for Labelling Packaged Goods
Stock Rotation (FIFO)
Food Storage Procedure (frozen, chilled, ready to eat food, etc.)
Cross Contamination Procedure
Personal Hygiene & Environmental Hygiene – hygiene relating to equipment, work and storage areas.
Ensure and comply with all the hotel's Policy & Procedures and Accounting Standard.
Perform any other duties as assigned by the hotel's management.
Job Requirements:
Prior relevant experience in hotel setting is an added advantage
